California-based healthy food café concept Vitality Bowls is adding a third spot in New Jersey. The brand signed a franchise deal with husband-wife team Hardik and Unnati Mistry. Now, it expects to open in Clifton during the first half of 2026, according to a press release. The superfood café concept stems from Roy and Tara Gilad’s search to find safe, healthy food alternatives after discovering their daughter’s severe food allergies. It offers a menu of quick meals made with clean, high-quality ingredients, such as acai bowls, smoothies, juices, salads, grain bowls, wraps, and toasts.
Now, with more than 126 locations open or in development, the chain ranks as one of the fastest-growing franchises in the U.S. by Entrepreneur, Inc. 5000, Franchise Times, and Fast Casual. Commenting on the planned launch in Clifton, Hardik Mistry said, “Opening aVitalityBowlscafé is a natural extension of my passion for health, wellness, and helping others live better lives.”A self-described entrepreneur with a background in IT, customer service, and operations, Hardik Mistry added, “When the opportunity to own a VitalityBowls came up, I was immediately drawn to the brand’s mission of serving nutritious, high-quality food that fuels both body and mind.
“My goal is to create a welcoming space here in Clifton where guests can enjoy delicious, clean meals, supported by a strong team and consistent, top-tier service.”
Tara Gilad shared, “Hardik and Unnati are the perfect duo to grow Vitality Bowls’presence in Clifton. Their background in customer service, paired with their passion for health and wellness, makes them an excellent fit for our mission to make nutritious eating more attainable for all. Hardik and Unnati truly reflect the heart of what VitalityBowls stands for, and we can’t wait to see the lasting impact their new superfood caféwill have in the community.”After opening New Jersey’s first Vitality Bowls two years ago in Harrison, married couple Amit and Geeta Patel added another outpost last spring in Hackensack.

Vitality Bowls, the leading health-food café concept that specializes in açaí bowls, smoothies, salads, wraps, grain bowls, and more, is redefining how guests create their dream açaí bowls with superfood ingredients. The brand announced the launch of its first-ever Create Your Own Bowl program, available nationwide starting March 1.
As the first açaí bowl customization option in the brand’s history, this innovative offering empowers guests to personalize their bowls using the same premium, superfood ingredients that have made Vitality Bowls a trusted name in the health-food QSR space.
With the Create Your Own Bowl, guests can build a bowl tailored to their dietary preferences, nutritional needs, and flavor cravings—allowing them to take control of their superfood dining experience like never before.
The program roll-out is just one example of Vitality Bowls’ strong start to the new year. The company also recently announced the opening of its first-ever food truck in Modesto, California, and added two new items in February featuring a chocolate cacao blend: the Dark Chocolate Delight Bowl and the Chocolate Crush Smoothie.
“At Vitality Bowls, our goal has always been to make healthy eating accessible, delicious, and meaningful,” said Tara Gilad, Co-Founder and President of Vitality Bowls. “The new Create Your Own Bowl is a natural next step in that journey, giving our guests more control in building açaí bowl creations with their favorite superfood ingredients. A superfoods cafe with coast-to-coast locations in 18 states has gone mobile with the opening of its first food trailer, choosing Modesto as the introductory location.
Vitality Bowls franchisee Silvana Robin opened her brick-and-mortar location at 3401 Oakdale Road in 2023. She presented the idea of a food trailer to the company around a year ago and was met with eager agreement.
“I guess I just want more,” Robin said. “I figured a food trailer with an extension of my store would be ideal.”
La Placita Food Truck Park, at 302 N. Ninth St., will be the trailer’s home a few days of the business week, with hours likely from 10 a.m. to 2 p.m., she said. The trailer will be at the food truck park beginning next week.
The menu will be a simplified version of what’s offered in-store, highlighting the best-selling items. Vitality Bowls sells acai bowls, smoothies, salads, wraps, and more.
Vitality Bowls has 126 cafes open or in development.
“The launch of this food truck under Silvana’s leadership represents an exciting step forward in our mission to make healthy eating more accessible,” its co-founder and president, Tara Gilad, said in a statement. “Complementing Silvana’s existing location, this model not only enhances our presence in Modesto but also paves the way for other franchisees to reach even more people in and around their communities.”
Robin said she plans to connect with local schools for partnerships with fundraisers and sports events.
Businesses and event planners can also request catering via the trailer. For more information, call 209-341-9250 or email modesto@vitalitybowls.com.
